A quick and easy option for a meatless meal. Double the amount for a family meal and serve with a garden salad.
2 tbsp flour
2 tbsp olive oil
2 cups of mixed vegetables of your choice
Optional: chilli, garlic, and spices of your preference
- Mix the vegetables, eggs and flour in a bowl. Add any optional ingredients here too.
- Heat the oil in a large non-stick frypan. Place dollops of the mixture in the pan and flatten a little with a spatula. Cook for a few minutes each side until golden and cooked through. Drain on paper towel.
- Season with salt and pepper
