Description

One-pan Chicken dinner idea, delicious, healthy and easy.


Ingredients

Scale
  • 400g chicken breast, boneless, skinless, chopped
  • 1 can chickpeas, rinsed and drained
  • 2 garlic cloves
  • 1 Tbsp olive oil
  • 1 tbsp lemon juice
  • 2 shallots, thinly chopped
  • 2 Tbsp chopped parsley
  • 1 tsp crushed red pepper / chili flakes
  • 1 tsp black pepper
  • salt to taste

Instructions

  1. Chop the chicken and saute it in a non-stick pan with the olive oil at medium high heat, add the crushed red pepper and black pepper and a pinch of salt and stir until coated. Cover with a lid for 3-4 minutes or until the chicken isn’t pink anymore.
  2. Add the chickpeas and keep stirring for another 3-4 minutes. Then add in the garlic and stir again for 1-2 minutes. Add the chopped scallion and stir again for another 2 minutes or until the chicken is done.
  3. Take the pan off the heat sprinkle some lemon juice and thinly chopped parsley on top.
  4. Enjoy! This would be great to serve with a simple tomato cucumber salad, tzatziki or hummus.
