A cheats version of a classic dish. Use pre-prepared skewers and vegetables.
450g hokkien noodles
750g honey soy chicken kebabs
400g stir-fry traditional vegetables (pre-packaged for convenience – or prepare your own)
1/3 cup dry roasted cashews, roughly chopped
3 tbs vegetable oil
- Place noodles in a large heatproof bowl and cover with boiling water. Stand for 3 minutes or until tender. Drain.
- Meanwhile, using a fork, remove chicken from skewers. Heat a wok over medium-high heat. Add 1 tbs vegetable oil, swirling to coat. Stir-fry chicken for 5 minutes or until just cooked through. Transfer to a bowl and cover to keep warm.
- Add 2 tsp vegetable oil to wok. Stir-fry vegetables for 4 minutes or until just tender. Add noodles, tossing to combine.
- Divide stir-fry among bowls, scatter over cashews and serve.
