Asparagus is readily available in Australia in autumn, spring and summer and is out of season in winter. Autumn is the cheapest time to buy Asparagus.
Asparagus is filled with nutrients including vitamins A, K and B2. Asparagus also contains iron, thiamin and folate.
Asparagus has been a popular vegetable in Europe since the Romans, and its popularity in Mediterranean and Chinese cuisine means Australians love it too.
Asparagus is a popular addition to stir fries and risotto. Here is a popular recipe for a tasty asparagus appetizer.
Recipe for asparagus
- 500g asparagus
- 2 tbsps olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Slice 500 grams of asparagus and place into a ziplock bag.
- Pour olive oil, balsamic vinegar and season with salt and pepper.
- Shake the bag to mix.
- Take out of the ziplock bag and place in an oven proof dish.
- Roast the asparagus in the oven for 20-30 minutes at 180°C.
Typically asparagus in Northern Europe is white asparagus, made by covering the shoots in soil as they grow.
