Fresh facts: Artichoke
Artichokes are packed with nutritional benefits. They are a great source of vitamin K which is important for bone health and blood clotting. Artichokes are also high in magnesium which is great for nerve and muscle conditions.
Artichokes can seem intimidating to cook and eat however a simple way to use artichokes is to buy marinated artichoke hearts and throw them into pasta.
Recipe for artichokes
- 1 cup pasta such as macaroni or penne
- 200grams artichoke hearts (marinated)
- ½ cup mushrooms
- 1 cup cherry tomatoes
- ½ cup olives
- ½ tsp basil
- Oregano to taste
- Salt and pepper to taste
- Boil the pasta.
- Combine all the ingredients; artichokes hearts, mushrooms, sliced tomatoes, olives, and basil.
- Season with salt, pepper, and oregano.
Artichokes have some of the highest antioxidant counts of any vegetable!
